Aurhor Dal "Arhar Dal with Vegetables"

Serves 4

250 gms- Aurhor Dal 2 Tcup of Mixed Vegetables- Cauliflower,Potatoes,Horse Radish,Peas Parwal etc-Cut in 1 inch Cubes
1 Tbsp- Ghee 1 Tsp- Panch Phoran
3 Nos- Green Chillies ( Slit Lengthwise ) 1 Tbsp- Ginger Paste
1 Tsp- Turmeric Paste ¼ Tsp- Red Chilli Paste
1 Tbsp- Coriander Paste 1 Tbsp- Cumin Paste
½ Tsp- Sugar 1 Tsp- Salt ( To Taste )
6-7 Tcup- Water ½ Tcup- Chopped Coriander Leaves


  1. Soak Dal in Water and then Wash it properly. Boil 6-7 Tcup Water in a Degchi and then add the Dal to it.
  2. Stir and when the Dal comes to boil add the Vegetables to it and also add Turmeric and Chilli Paste to it. Let the Vegetables get cooked properly.
  3. Remember to add the Vegetables according to their Cooking time taken to get cooked.
  4. For example add Potatoes first.The whole process of the Dal getting cooked will take about half an hour so add the Vegetables accordingly.
  5. Next add Green Chilli,Salt,Coriander Paste,Cumin Paste and Sugar.Simmer well and see that both the Vegetables and the Dal gets cooked.
  6. Add more Water if needed.Temper the Dal with Ghee and Panch Phoran.
  7. Add Coriander Leaves to it and mix well. Check the Seasoning and adjust accordingly. Serve hot.
