Serves 8

2 cups ridge gourd (turiya), peeled and diced 2 teaspoons lemon juice
1 cup lavingya paatra, sliced 1 teaspoon sugar
1/2 teaspoon cumin seeds (jeera) 1 tablespoon oil
1 teaspoon green chillies, chopped salt to taste
1 teaspoon ginger paste For the garnish
1/2 teaspoon turmeric powder (haldi) 1 tablespoon grated coconut
2 teaspoons coriander-cumin seed powder (dhana-jeera) 1 tablespoon chopped coriander

For the Garnish

1 tablespoon grated coconut 1 tablespoon chopped coriander


  1. Heat the oil in a handi and add the cumin seeds. When they crackle, add the ridge gourd, 2 cups of water and salt and cover with a lid.
  2. Add the green chillies, ginger paste, turmeric and coriander-cumin powder and cook until the ridge gourd is tender.
  3. Add the paatra, lemon juice and sugar and simmer for 5 minutes.
  4. Serve hot, garnished with grated coconut and coriander.
