For Cholle

Ingredients
200g Kabuli chana 1 tsp coriander seeds
1/2 tsp garam masala 1 bunch cilantro, chopped
10g garlic 2 onions, chopped
1/2 tsp chilli powder Oil 30 ml
1 tsp aamchur Salt to taste
50g ginger

For Bhature

Ingredients
500g Maida flour 200g yoghurt
125g oil 25g baking powder

Method

  1. Soak the chana overnight and boil until tender.
  2. Make a paste of ginger, garlic, and coriander seeds and keep aside.
  3. Heat oil in a pan, fry onions, garam masala until brown, add ground paste and fry for few minutes.
  4. Then add soaked chana, salt, chilli powder, some water and cook until the gravy thickens. Later add aamchur powder, chopped cilantro and fry for 2 minutes. Remove and keep aside.

Bhature

  1. Sieve the maida flour, add ghee, yoghurt, and baking powder and knead to smooth dough.
  2. Cover with a muslin cloth and keep aside for overnight.
  3. Make balls from the dough, roll into thick puris and fry in oil on both sides until golden brown. Serve with the above prepared curry.

Modification

Mix whole wheat flour and maida in equal quantities. Add two slices of bread dipped in water. Let it rise and the roll it into thick puris and fry. Dab with tissue to remove excess oil.
