Serves 6

Ingredients
1 kg pork salt to taste
5 green chillies 1 tsp. chilli powder
8 to 10 cloves garlic Roast and Powder finely 1 tbsp. coriander seeds
4 big onions 1/2 tsp. mustard seeds
1/2 inch piece ginger 2 tsp. cumin seeds
1 tsp. turmeric 2 tsp. peppercorns
3 tbsp. vinegar or coorgi kachampull

Method

  1. Cut the pork into medium-sized pieces.
  2. Wash and smear with turmeric, chilli powder and salt.
  3. Grind the green chillies, onions, ginger and garlic coarsely.
  4. Put the cut meat in a dekchi with the ground masala and a cup of hot water.
  5. Let it cook well. When almost cooked, add the powered masalas.
  6. When well cooked add the vinegar or kachampuli and remove from front of the fire.
  7. There should be a thick gravy for the curry.

Modification

Choose lean meat like lean goat meat, chicken, beef muscle instead of pork.
