Serves 6

Ingredients
1 kg. meat (goat or lamb) 5 gm. coriander
2 kg.buttermilk 6 cloves
1 tbsp. besan (gram flour) 1 tsp. red chilli
250 gm. desi ghee or sarson oil 1 tsp. black cumin
6 sticks cinnamon

Method

  1. Clean the meat in water, then put it in a wide-mouthed basin, add all the spices except coriander and chilli and deep fry with ghee or oil.
  2. When brown, add buttermilk prepared with besan. Stir till completely cooked.
  3. Add green chilli and coriander and serve with plain rice.

Modification

Use oil instead of ghee. Reduce amount of fat used for preparation. Use lean meat like chicken, lean goat meat, beef muscle, etc .
